Blackstone Griddle: Teriyaki Pork and Fried Rice with Vegetables


Yesterday was the perfect afternoon to fire up the Blackstone Griddle. I was in the mood for a stir fry of sorts and with a prepackaged pork tenderloin ready for slicing and dicing it was quick work to get everything ready for the griddle.

This recipe is easy to double so I'll just outline what I used and you can adjust your amounts according to how many you need to feed. 

It's best to use rice that has been cooked and cooled before cooking on the griddle.  To make this step easier, I used (Uncle) Ben's precooked Basmati Rice.  To ensure proper cooking of the vegetables, defrost before using.

Vegetable oil
24 oz. pork tenderloin, cut into 1/2" x 1/2" pieces
2 (8.5 oz.) Ben's Original Basmati Rice
16 oz. package frozen mixed vegetables (thawed)
Low-sodium soy sauce
2 eggs lightly beaten
Kinder's Teriyaki Marinade and Sauce

Preheat the Blackstone Griddle.  Add a small amount of oil and, using a metal spatula, spread it around a bit.  Add the pork tenderloin and cook, stirring continuously.


When the pork has cooked through, move it to a far end away from the main heat.


Add a tablespoon of oil onto the griddle.  Add the rice and, using the metal spatula, break it apart so it can begin to brown.  Add a few shakes of soy sauce to the rice as you stir and cook.  When the rice is browned, add the vegetables and continue to cook for 5 - 7 minutes.

Using the spatula, mound the rice, and make a small well in the center.  Pour in the beaten eggs.


Continue to stir the rice and vegetables so that the eggs begin to cook.



Mound the rice again, and cover with a metal bowl or dome.  Add a small amount of water to the griddle around the rice and lower the bowl or dome.  This will allow steam inside and will finish cooking the rice/vegetables/eggs.


Now, to finish preparing our meal, pour enough of the Kinder's Teriyaki Marinade and Sauce to the pork and toss to completely coat and caramelize a bit.



Plate the rice and pork and garnish with thinly sliced green onions.  Provide soy sauce for anyone who would like to add a little!
